This 17th-century country house hotel, set in the heart of Hampshire, offers a unique blend of historic luxury, garden-to-plate dining, and world-class cookery masterclasses.

The visit included a nine-course tasting menu from a MasterChef: The Professionals champion and a hands-on cooking session with a Great British Bake Off winner, providing a comprehensive insight into a truly exceptional gastronomic destination.

Day 1: A Historic Setting and a Champion’s Menu

Upon arrival, Richard was given a guided tour of the magnificent Lainston House. For over 360 years, it was a private home before being transformed into a luxury hotel 40 years ago.

Set within 63 acres of stunning grounds, the house centers its culinary ethos around this natural setting.

The century-old garden yields seasonal produce, picked metres away, bringing unmatched freshness to the hotel’s menus and cocktails.

The orchard alone produces a ton of apples annually.

A fascinating historical aside reveals that President George Bush Sr. was a regular guest, often found fly-fishing on the grounds before having the chef prepare his catch for dinner.

The evening’s highlight was the nine-course seasonal tasting menu at The Avenue restaurant, prepared by the celebrated winner of MasterChef: The Professionals 2023, Tom Hamblet.

Each dish was a masterwork of flavour and technique, showcasing the best of British produce.

Day 2: Masterclasses with Masters

The second day began with breakfast, followed by an exclusive cookery masterclass at the hotel’s on-site Season Cookery School.

The session was co-hosted by two of the UK’s most exciting culinary talents: Tom Hamblett and Matty Edgell, winner of The Great British Bake Off 2023.

Guests actively created two signature dishes, guided step by step in this hands-on experience.

With Matty, they perfected the art of the Basque cheesecake, and with Tom, they prepared a stunning main course of beef fillet with roscoff onions, lovage emulsion, grey oyster mushrooms, and beef jus.

After their hard work in the kitchen, guests had the pleasure of enjoying the very dishes they had just created. The Season Cookery School offers over 100 different classes annually, catering to all skill levels, from short workshops to full-day culinary immersions.

Standout dishes from the menu included:

  • Pigeon on toast: A bold and inventive starter with smoked celeriac, parsley and date.
  • Scallop: Perfectly cooked with anchovy, seaweed pickle and ajo blanco.
  • Lamb: A sublime main course featuring tender lamb accompanied by sweetbread, pea, tarragon and a mint-infused sauce.
  • Wild turbot: An elegant fish course with girolles, cauliflower, cordyceps and vin jaune.

The meal was a testament to Chef Hamblett’s innovative culinary vision and his commitment to seasonal excellence.
